Based on our little Facebook survey on what summer activities our fans are most excited about, itâ€™s clear Backyard BBQâ€™s are tops on a lot of peopleâ€™s minds. I have to agree- not many things beat a breezy, sunny day spent with friends and family while grilling up some awesome food.
One of my absolute favorite summer grilling dishes are ribs. Slow cooked, spicy, tangy, tenderâ€¦.all words I immediately think of when someone mentions making them. I like to think of myself as a rib connoisseur. Iâ€™ve tested a lot of recipes until I finally landed on the one below.
Slow Cooked Rib Recipe
This rib recipe requires some TLC, but I promise you it will be worth it when you see your BBQ guests salivate and beg for seconds.
– 1 6oz can tomato paste (preferable organic)
– 1 to 1.5 cups of beef stock (look for low or no salt added)
– 3 Cloves Garlic minced
– .5 of an onion minced
– 2 tablespoons dijon mustard
– 2 tablespoons apple cider vinegar
– 1 tablespoon Extra Virgin Olive Oil (EVOO)
– 1 teaspoon sea salt
– 2 tablespoons chili powder
And of course two big slabs of pork ribs!
Combine all ingredients to make the dry rub. Mix until itâ€™s a thick paste and then rub into both slabs of ribs on both sides. Set the ribs aside to soak up the spices.

To make the sauce, just combine all the ingredients listed above and simmer for 25 minutes or more until itâ€™s thick. Pour a little sauce over the ribs to taste before cooking.

Place the ribs in a foil lined pan, cover with foil and bake at 325 degrees for 2 â€“ 2.5 hours until the bones are showing on the sides. To finish them off, grill them over medium-high heat meat side down for 7-9 minutes.
